Pork Chops and Mushrooms

Outstanding special feast!
Makes 4 very generous servings

2 pounds thin-sliced pork chops
1/2 cup blackberry vinegar
1/4 cup citrus honey (regular honey and a few drops of orange oil will also work)
1 tsp savory
1/2 tsp salt or to taste
1/4 tsp ground allspice
2 tbsp olive oil
12 ounces (two small containers) of mushrooms, sliced

1.  Combine all ingredients in a glass baking dish.  Marinate the pork chops for at least 30 minutes or covered in the refridgerator, overnight.  Pierce the meat multiple times with a fork and turn over several times.

2.  As you take out the chops to fry, save the marinade.  Heat oil on a hot griddle or large frying pan.  Fry the chops on medium high heat, turning over once, until done.  This takes maybe 3 to 4 minutes a side, depending on the thickness of the meat.  Set chops aside.

3.  Using the same fry pan (don’t wash out all the flavors!) add remaining marinade and all the mushrooms.  Saute the mushrooms on medium high heat for about 5 minutes or until soft and done.  Serve the chops covered in mushrooms!

The meal is wonderful with Green Beans and Ham Bits, Sweet Potatoes, Sauerkraut and Orange Slices.

Gobbledy Oink Meatloaf

Makes 6 servings

14 1/2 oz tomatoes, canned diced
1 cup rolled oats
1 pound ground turkey
1 pound ground pork
1 tsp apple ciper vinegar
2 tsp dry mustard
2 tsp sage
1 1/2 tsp thyme
1 tsp sea salt
1/2 tsp ground pepper

1.  Place contents of the can of diced tomatoes in the blender.  Blend for a few second until smooth.
2.  Place rolled oats in a bowl and pour the tomato juice over it.  Allow to set at least 5 minutes to hydrate the rolled oats.
3.  In the mean time, defrost the ground meat, if frozen, by placing in the microwave for 2 to 3 minutes.
4.  Combine all ingredients.  (Hands work the best. Yes, it�s messy, but you’ll survive!)  Mix well.
5.  Shape the meat into a loaf in a loaf pan.  Bake at 325 degrees for about 50 minutes or until done.  Let is set a few minutes out on the counter before you try to slice it.  Serve hot, or let it cool, slice thin, and save for sandwiches later.
