Turkey Cranberry Sandwiches

FOR THE NON-DIABETIC & NON-GLUTEN INTOLERANT

Ingredients:
1 whole wheat bun
1/4 lb (4oz) deli sliced turkey (baked turkey leftovers ok too)
1/4 cup Honey
1 packet of Stevia
1/2 cup water
1 cup (4oz) cranberries (yes those hard red little berries, that come packaged
    in the produce section,you always wondered about.)

Combine Honey, and water and bring to a boil stir and allow to boil for 3 or 4 minutes then add the cranberries and return to a boil.  Cook, boiling, for at least 5 minutes on medium and then remove.   (remember, if it is not sweet enough, you can add a packet of Stevia, but it is best not to “oversweeten” to start with.  When flavor meets your expectations, chill for at least 2 hours before serving.

After chilling remove cranberry sauce from fridge.

Slice whole wheat bun in half and spread turkey over both halves.  Cover the Turkey liberally with the  cranberry sauce.

It is a yummy reminder of Thanksgiving any time of the year!!!

 

FOR THE DIABETIC AND/OR GLUTEN INTOLERANT

Ingredients
2 or 3 packets Stevia
1/2 cup water
1 cup (4oz cranberries)
1/4 lb deli sliced turkey breast (or leftover turkey)
2 Slices of rice bread or Ezekiel Sesame Bread

Bring water to a boil, add cranberries and cook at a low boil for about 6 or 7 minutes.  Stir until semi smooth with a wire wisk.  Allow to cool for 1 hour,  and then  remove from refrigerator.   Add pkt (most packets equal sweetening of 2 teaspoons of sugar) of Stevia and taste, if not sweet enough, you may add another up to a total of 3 packets.

Toast the rice or Ezekiel Bread, top with the turkey, divided onto both slices,
Cover with Cranberry sauce and serve!
